In Extrem we only produce our Pure Extremadura acorn fed 100% Iberian ham maximum continuous quality purebred Iberian pigs reared in our meadows, where all pigs have more than 2 hectares of oak forest to graze on our liberty, feeding exclusively acorns and natural pastures, in the heart of the Dehesa Extremadura.

Following our tradition, we selected the most noble part of the Iberian pig, characterized by less fat, the hind legs, which are transferred to our dryer at Herreruela, in the Extremadura region of Sierra de San Pedro, where all the hams are subjected a healing process over 36 months. All these features give our acorn fed ham 100% Iberian a juicy aspect, a penetrating and subtle aroma, flavor and intense, complex and elegant, with sweet notes and acorns, which have become one of the jewels of gastronomy not only national but also international.

 

Healing: A minimum of 36 months in our natural cellars of Herreruela
