    This wine is the result of the selection of three grape varieties: Tempranillo 85%, Graciano 10% and Garnacha 5%, grapes harvested manually in 15 kg boxes. Depending on the year, it will be preceded by partial or total destemming according to the need.

    Fermented in “Allier” wooden vats for 11 days at a temperature between 24º and 28º C, in the presence of the skins for a further 25 days, obtaining noble tannins that give rise to long-lasting color resistance in our entire range of wines.

    It is advisable to uncork and decant between 30 and 45 minutes before, to appreciate all its aromatic potential.

    Bottled in the absence of any type of filtration.

    Medium-high layer and with an elegant garnet rim at the end of the glass. Great breadth of aromas, highlighting the notes of wild strawberry, red cherry, plum, blackberry and cranberry that combine with the aromas of tobacco, brioche, ground coffee, caramel, cedar and cinnamon flower. In the mouth it stands out for the elegant balance between alcohol and acidity, freshness and its polished and friendly tannins that provide a refined palate.     The Pago de Carraovejas grape was harvested by hand after a first selection of clusters in the vineyard itself. Subsequently, in the winery, a double selection was carried out: of clusters and of berries. Gravity production of the must allows maximum respect for the raw material. The vatting process is carried out meticulously. During the fermentation process, yeasts and lactic acid bacteria native to our farm were used. The wine was refined in 225 and 600 liter French and American oak barrels for 12 months. The entire process was marked by precision and care in every detail. For greater protection, the wine contains sulfites.

    Typical sausage of the Valencian Community of about 20 centimeters in length and ideal to eat during any part of the day.

     

    It is composed of lean pork (30%), beef (30%) and lardeo and marinated with salt, pepper and anise. It comes embedded in a natural casing, tied in strings of approximately 20 cm. long and whose healing process takes place in a natural environment for 7 to 10 days.

     

    The Easter sausage (Longaniza de Pascua) should never be wider than the finger and is eaten dry. Its consumption is associated with the end of the Lenten period where the church already allowed us to eat meat again. It does not need to be cooked, it must have a strong and characteristic smell and it can also be eaten between bread.

     

    According to chroniclers, the Easter sausage can come to have a medieval and humble origin where sometimes the meat was not available to everyone and therefore these narrower sausages were made to take better advantage of the meat and to be able to have a greater number of pieces than people consumed at the end of Lent.

     

    It is served in vacuum packed packages of 5 units. About 300 grams approximately.

    Acorn-Fed Iberian Ham Extrem DO (designation of origin) has a continued high quality and it is elaborated with purebred Iberian pigs. Those pigs have grown. These pigs have been bred feeding exclusively on acorns and natural pastures in Extremadura.  In Extrem Puro Extremadura, they made Jamón Ibérico Puro de Bellota in their traditional way. They obtain it from pig’s hind legs that are big and elongated from the best part of Iberian pig –which is characteristic because it has less quantity of fat-. They cure it more than 36 months. All these features give this Iberian ham few more delicate and complex aromas.

    They carry out a strict selection of the finest pieces of each pig which are transferred to the drying of Extremadura Montánchez mountain range. Here all the hams are dried in the most possible natural and so the result is a unique flavor.

    This strict elaboration process is supported by the DO Dehesa de Extremadura, the most prestigious and valuated award by experts. It is the DO more demanding of the four that exist in Spain.
