Recipe of king prawns with garlic and Iberian ham

Ingredients for 4 servings
– 1 kg. of prawns, without shell
– 8 garlic cloves rolled
– 25 gr. of Iberian ham cut into thin strips (you can buy it here)
– 1 chopped red pepper
– 1 cayenne
– 1/3 cup Oloroso Jerez
– 1/2 cup of olive oil (you can buy it here)
– fresh chopped parsley (to decorate)
FIRST STEP: Sprinkle the prawns on both sides with salt and leave them for approximately 10 minutes between 2 layers of absorbent kitchen paper.
SECOND STEP: In a large frying pan with olive oil, sauté the garlic and cayenne on moderate heat, until it is golden enough, remove the garlic slices, the cayenne and reserve.
THIRD STEP: Then in the same pan add the ham and red pepper and cook the mixture, stirring, until the pepper softens. Add the prawns and sauté the mixture over medium high heat, about 3 minutes.
FOURTH STEP: Add the sherry and garlic and simmer the mixture, stir occasionally until the prawns are well cooked. We pass the whole to a serving dish and sprinkle with the parsley. Ready to serve!
