Dehesa de Extremadura
In Spain, we speak about Iberian ham and it is easy that those words go very close to others as “Dehesa de Extremadura”. This Dehesa has a long history and a great professional prestige within the restaurant industry.
Its geographical location comprises the two provinces of Extremadura (Badajoz and Cáceres) and extends to some of the neighboring areas of Portugal, Salamanca and Huelva.
Extremadura has about one million hectares of meadow and it becomes a meadow of reference, a real ecological Olympus to have one of the best preserved ecosystems and valued in Europe. A) From acorn: one pig which is intended for slaughter immediately after the use of the open range based on acorns and grass in the pastures of Extremadura . In this reset phase up to 60% by weight of entry. The acorn hams have red label and red or black seal depending 75% Iberian breed or 100 % Iberian respectively.
B )From field bait : that pig could be 75% Iberian breed or 100 % Iberian. Its fattening phase takes place in extensive, natural pastures and they are feed mainly with cereals and legumes. Hams and field bait have the seal and label Green.
Dehesa de Extremadura, has the Designation of Origin from 1990 (DOE 05/30/90 ) after being ratified by the Ministry of Agriculture ( BOE 02/07/90 ). The European Union also recognized in June 1996 to the Dehesa de Extremadura as a Protected Designation of Origin (PDO whose definition, is a kind of geographical indication applied to an agricultural product or foodstuff whose quality or characteristics are due exclusively to the geographical environment which it is produced, processed and prepared). By endorsing this European Union was confirming at European level the prestige and quality of these hams. Do not you want to try an Iberian ham with a high quality?
